Carrot, orange and sesame salad

A bright and zingy salad with sesame and orange.

I love the colour of this salad and it never fails to bring some sunshine to the table. Incredibly easy to prepare this keeps very well so is a good one to make ahead if you have lots to do.

Ingredients

  • 6 medium to large carrots, grated (about 350g)
  • 1 large orange
  • 3 tsp toasted sesame oil
  • 3 tbsp cold pressed olive oil
  • 1 tbsp cider vinegar
  • salt and pepper to season
  • 6 tbsps black or white sesame seeds (optional)
  • Japanese Tamari or Chilli Smoke Superseeds

Step 1

Begin by washing peeling and grating your carrots.

Step 2

Place your grated carrots into a medium sized bowl.

Step 3

In a small bowl mix together your dressing ingredients.

Step 4

To slice your orange segments begin by cutting off the top and bottom so it sits flat and sturdy on your chopping board.

Step 5

Using a serrated knife gently cut away the skin and pith.

Step 6

Use your knife to slice the segments out of their skins so that you are just left with the juicy fruit. Remove any pips that you come across.

Step 7

Squeeze out any juice left from the skin or on your board into your carrots.

Step 8

Pour in your dressing and sesame seeds and stir well.

Step 9

Add your oranges and stir again, lightly this time so as not to break up the segments.

Step 10

Transfer to a serving plate, top with superseeds (if using) and serve.
