These are the steps you can follow to make it: 

Step 1: Measure out the rice semolina flour, tapioca starch, and xanthan gum. Mix well with a whisk to break up any clumps of rice flour or tapioca starch in the bag or container you’re using. Use your hands if needed to mix everything together well. This will ensure it’s totally blended together without any lumps or clumps of ingredients.
Step 2: Add the olive oil to the dry rice flour, tapioca starch, and xanthan gum mixture. This should be done in a separate bowl. Use your hands to mix everything together well until you have a nice dough that’s soft to the touch and easy to handle.
Step 3: Divide the dough into smaller sections using food scissors or a knife. You can make each section contain about 1/4 cup measure of dough (64 g). Then, transfer each portion to a plate or another flat surface that’s been lightly floured with gluten-free flour.
Step 4: Roll out each 1/4 cup-sized piece of dough on the gnocchi board into round ropes resembling gnocchi noodles. It should be 1-inch pieces small.
Last step: Add the sauce of choice to each vegan potato gnocchi and place it on a flat surface that’s been lightly floured with gluten-free flour. Roll each one out again to make sure it’s evenly coated with the sauce, toppings, and spices.
