This creamy soup stock recipe is made using cauliflower instead of chicken broth. You won’t believe how delicious it tastes!
1 medium head of cauliflower
3 cups vegetable broth
1/4 cup coconut milk
1 teaspoon curry powder

Preheat oven to 350 degrees Fahrenheit. Cut off the stem end of the cauliflower and cut the florets into small pieces. Place the cauliflower in a baking dish and drizzle with olive oil.
